  1. Place a medium (wide pan) on medium heat and add the oil.
  2. Add the onions, garlic and ginger. Cook until onions are soft.
  3. Add the red chilli, salt and pepper. Mix until blended.
  4. Add the chickpeas and cook for 5 minutes.
  5. Add the chopped kale and mix well until the onion mixture has blended with the kale.
  6. Add the lemon juice. This will help the kale keep it's bright green colour.
  7. Cook until the kale is wilted - approx. 5-8 minutes.
  8. Serve warm or cool.
