Ingredients
- 1 Bunch Kale Washed, dried and chopped
- 1 Can 540 Ml/14 ounces Chickpeas drained Can size does not have to be exact
- 1 onion chopped
- 1 Clove Clove garlic minced
- 1 Nob Fresh Ginger cut into long thin strips
- 2 Tablespoon Fresh Lemon Juice
- To taste Himalayan salt (or pink salt) and fresh black pepper
- 1 Red chilli thinnly sliced

Instructions
- Place a medium (wide pan) on medium heat and add the oil.
- Add the onions, garlic and ginger. Cook until onions are soft.
- Add the red chilli, salt and pepper. Mix until blended.
- Add the chickpeas and cook for 5 minutes.
- Add the chopped kale and mix well until the onion mixture has blended with the kale.
- Add the lemon juice. This will help the kale keep it's bright green colour.
- Cook until the kale is wilted - approx. 5-8 minutes.
- Serve warm or cool.
