Zucchini is so versatile, you can use your favourite spices and herbs to make this your own. Perfectly tender crisp and easy oven baked zucchini. Incredibly good and take 10 minutes to prep. This is one of those dishes you’ll want to have in your back pocket for those busy weeknight! I used mango powder which packed this dish with flavour. Mango powder is readily available now but can always be found at your local Indian store.

Ingredients
- 4 Medium Zucchini thinly sliced (in rounds)
- 2 Shallots thinly sliced
- 1 Tablespoon Oil
- 1/2 Teaspoon Himalayan salt (or pink salt)
- 1/2 Teaspoon Mango powder Optional
- 1/2 Teaspoon Chilli Flakes
- 1 Teaspoon Paprika (smoked paprika is my favorite)

Instructions
- Preheat oven to 400 degrees F. Line an oven tray with foil or parchment paper.
- In a large mixing bowl, add the oil and stir in the salt, mango powder, chilli flakes and paprika. Mix until all combined.
- Add the sliced zucchini and shallots. Mix until the vegetables are evenly marinated by the oil and spices.
- Transfer onto the oven tray and bake int he oven for 20 minutes.
- Serve with virtually anything or enjoy it on it's own!
