We had snow falling at the end of April! After coming inside, I had a craving for something hot, nutritious and comforting. What better than a hot bowl of soup made from fresh vegetables to warm up my insides. This soup is so quick and easy to make. Use whichever vegetables you have at home and make this recipe your own.

Ingredients
- 2 Cups Mushrooms sliced
- 2 Potatoes cubed
- 1 Zucchini cubed
- 2 Cups Spinach chopped
- 1 Cup Beans I used kidney beans but you can use any
- 1 Cup Tomato puree
- 6 Cups Vegetable broth I used mushroom broth in my recipe
- 2 Tablespoon Oil
- 1 onion chopped
- 2 Cloves Garlic minced
- 2 Teaspoon Ginger paste or chopped ginger
- 1/2 Teaspoon Himalayan salt (or pink salt)
- 1 Teaspoon Ground Fennel
- 1 Teaspoon Ground Cumin and Coriander
- 1/2 Teaspoon Teaspoon Chilli Flakes
- Juice of 1 lemon

Instructions
- In a large pot, heat the oil on medium heat until the oil begins to shimmer.
- Add the chopped onions, garlic and ginger. Cook until soft.
- Add the spices and blend until fragrant.
- Add the mushrooms, potatoes, zucchini, beans, tomato puree and broth and bring to boil.
- Reduce heat to low, cover and let simmer for 15-20 minutes or until the vegetables are soft and cooked.
- Add spinach and lemon juice just before serving. Stir and ladle into bowls.
