One of my favorite things on a Saturday morning is going to the farmer’s market and purchasing fresh in-season ingredients to use in this family favorite salad served with a fresh dressing.

Ingredients
- 1 red onion chopped
- 1 bell pepper chopped (red, yellow or orange)
- 1 cup cherry tomatoes cut in half
- 1 cup cooked chickpeas
- 1/2 cup cooked corn
- 2 tbsp dry cranberries
- 1 avocado
- 2-3 cups arugula

Instructions
- Combine all the ingredients except dressing in a bowl and mix
- Whip the ingredients for the dressing until blended and pour over the salad.
- Mix dressing into salad and serve.
