Ingredients
- 2 Onions
- 2 Zuchinni
- 2 Sweet Peppers - Red, Orange, Yellow
- 10 Mushrooms
- 1 Chinese Eggplant
- 1 Package Firm Tofu - Optional
- 2 Tablespoon Oil
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Smoked Paprika
- 1 Teaspoon Ground Cumin
- 1 Teaspoon ground Coriander
- 1 Tablespoon Brown Sugar

Instructions
- Peel and slice onions so they hold at the bottom.
- Slice zucchinis and peppers.
- Cut mushrooms in half lengthways.
- Cut eggplant in 1 inch squares.
- Cut tofu into 1 inch squares.
- In a large bowl, add oil and spices. Mix well.
- Add vegetables and blend well until all vegetables are covered with spice mixture.
- Skewer onto either metal skewers or wooden ones that have soaked in water for several hours.
- Cook on medium heat on the BBQ. Turning frequently.
- Serve with rice, quinoa or over lettuce.
