Berry Chia Parfait
Chia seeds are the edible seeds of Salvia hispanica plant related to the mint family. They are native to central and southern Mexico and are loaded with protein. They are a powerhouse of nutrition, containing fiber, protein, and omega-3 fatty acids—which promote slow digestion and sustainable energy. This recipe is so quick and easy you can make in minutes. I like to assemble and store them individual small mason jars and eat them at anytime during the day.

  1. Mix almond milk, chia, vanilla and 1 Tablespoon of maple syrup. Stir until very well combined (otherwise it will be clumpy).
  2. Cover and store in the fridge for at least six hours or over night. Stir the mixture a few times.
  3. Heat the berries in a small pan on medium heat. Stir in 1 Tablespoon of maple syrup. Heat until the liquid evaporates. Cool until ready to use.
  4. To assemble: layer in jars/small glasses. Pour chia mixture at the bottom, layer the berries and then repeat. Garnish with chopped nuts.
