  1. In a mixing bowl, mix together the dry ingredients: oat flour, baking powder, salt and cinnamon. In a separate bowl, whisk together the wet ingredients: almond milk, melted coconut oil, flax eggs, maple syrup and vanilla extract.
  2. Pour the wet ingredients into the dry ingredients. Stir gently until just combined (the batter should still be a little lumpy). Set aside and let rest for 10 minutes.
  3. Preheat your waffle iron to medium-high.
  4. After 10 minutes, spray the waffle iron with cooking spray (unless the waffle iron is truly non-stick). Stir the batter once or twice and pour some onto the heated waffle iron. Pour just enough to cover most of the centre area, close the lid and let cook. Once the waffle is deeply golden and crisp, transfer it to a cooling rack or baking sheet. You can keep your waffles warm by placing them in a 250 degree oven until ready to serve. Avoid stacking the waffles on top of each other because they’ll lose their crispness. Repeat with remaining batter.
  5. Serve the waffles with maple syrup, fruit or any other toppings of your choice and enjoy!
