This is a really delicious and healthy dish, easy to prepare, and my go-to for a quick, nutritious meal. Use your favourite white fish (cod, haddock, basa, tilapia, etc) and don't worry if your fish is frozen, just add it in and it will cook very nicely. You can also use a store bought curry paste instead of the individual spices, and feel free to swap in your favourite veggies - this dish is so versatile that most veggies will work.

Ingredients
- 1 Tablespoon olive oil
- 1-2 Cloves crushed garlic
- 1 Teaspoon Paprika (smoked paprika is my favorite)
- 1/2 Teaspoon Ground Cumin
- 1/2 Teaspoon ground Coriander
- 1/2 Teaspoon turmeric
- 2 Tablespoon Lemon Juice
- 1/2 Onion sliced lengthways
- 10 Mushrooms sliced
- 1 Sweet Bell Pepper
- 3-4 Ounces White fish (cod, haddock, basa, tilapia etc)
- 4-5 Ounces Coconut milk
- Salt and pepper to taste
- Chilli flakes to taste

Instructions
- Heat the oil on medium-low heat in a heavy pan. Once the oil warm add the garlic and spices and stir for about minute.
- When the spices are fragrant, add the vegetables (onion, mushrooms, peppers) and stir fry on medium heat until they begin to soften.
- Add the coconut milk and stir until the mixture is all amalgamated and it begins to simmer.
- Add the fish and and let cook for about 10 minutes.
- Once the fish is cooked, remove from heat and stir in the lemon juice.
- Serve hot as a soup, stew or with rice/quinoa.
