Easy Palak Paneer (Spinach with Cheese)

Palak Paneer is a classic Indian dish of cooked spinach with cubes of paneer cheese. You can substitute firm Tofu for the paneer (cheese) to make this a vegan dish.

I am a bit of a purest, I don’t particularly like my food over-spiced so I add the basic spices in minimal quantity without sacrificing flavour. You can adjust the spices to your preference.

This dish comes together in less than 20 minutes. I usually buy a block of paneer, cube it, pan fry it and freeze it in portion sizes so when i need it, I pull one portion out of the freezer and add it to what I’m cooking. It’s that easy!

Instructions
  1. Heat oil in a medium size pan on medium heat.
  2. When the oil begins to shimmer, add the onion, ginger and garlic.
  3. Cook until the onion are soft, translucent and start to turn golden (3-4 minutes).
  4. Add the salt, chilli flakes, cumin and coriander powders and stir until blended and fragrant.
  5. Add the spinach and paneer and stir until combined.
  6. Turn the heat on low, cover and cook for 5 minutes more stirring occasionally.
  7. Add the smoked paprika and stir until all combined.
  8. Serve hot with rice, quinoa, chapati, naan or any flatbread.
