Palak Paneer is a classic Indian dish of cooked spinach with cubes of paneer cheese. You can substitute firm Tofu for the paneer (cheese) to make this a vegan dish.
I am a bit of a purest, I don’t particularly like my food over-spiced so I add the basic spices in minimal quantity without sacrificing flavour. You can adjust the spices to your preference.
This dish comes together in less than 20 minutes. I usually buy a block of paneer, cube it, pan fry it and freeze it in portion sizes so when i need it, I pull one portion out of the freezer and add it to what I’m cooking. It’s that easy!

- 1 Package Frozen Spinach chopped, thawed with water squeezed out I used a 300 g package
- 1 Cup Paneer, cubed and pan fried golden Cube the paneer and pan fry in 1 Tablespoon of oil, turning until golden on all sides
- 1 onion chopped
- 1 Nob Fresh Ginger chopped
- 2 Cloves Garlic minced
- 1/2 Teaspoon Himalayan salt (or pink salt)
- 1/2 Teaspoon Chilli Flakes
- 1/2 Teaspoon Cumin powder
- 1 Teaspoon Smoked Paprika
- 1/2 Teaspoon Corriander powder
- 2 Tablespoon Oil

- Heat oil in a medium size pan on medium heat.
- When the oil begins to shimmer, add the onion, ginger and garlic.
- Cook until the onion are soft, translucent and start to turn golden (3-4 minutes).
- Add the salt, chilli flakes, cumin and coriander powders and stir until blended and fragrant.
- Add the spinach and paneer and stir until combined.
- Turn the heat on low, cover and cook for 5 minutes more stirring occasionally.
- Add the smoked paprika and stir until all combined.
- Serve hot with rice, quinoa, chapati, naan or any flatbread.
