Farm Fresh Vegetables and Arugula Salad

bell pepper chopped (red, yellow or orange)

cherry tomatoes
cut in half

cooked chickpeas

cooked corn

dry cranberries

avocado
2-3
cups
arugula
Dressing
Juice of one lemon

tbsp
olive oil
1/2
tsp
Dijon mustard
Salt and pepper to taste
Instructions
Combine all the ingredients except dressing in a bowl and mix
Whip the ingredients for the dressing until blended and pour over the salad.
Mix dressing into salad and serve.
