Roasted Sweet Potatoes with Thyme
Ingredients

sweet potatoes peeled and cut into ½ inch cubes
1
tbsp
grapeseed oil or ghee
1/2
tsp
honey
fresh thyme
1
pinch
salt and pepper
Instructions
Set oven to 375 degrees to preheat.
Mix oil or ghee, honey, salt, pepper and thyme.
Add sweet potato cubes.
Mix until potatoes are coated with the oil mixture.
Spread an oven pan with parchment paper, add potato mixture and cook in oven for approximately 20 minutes or until potatoes are soft.
Serve right away or let cool.
