This is a very versatile vegan cheese sauce that tastes great and may be used in many dishes and for many purposes. Made with a very few simple ingredients, it becomes a silk and indulgent. Use this smooth sauce on pasta, as a dip, in quesadillas and over steamed vegetables. Assembles and cooks within minutes!

Ingredients
- 1 1/2 Cups Any non-dairy milk I used Almond Milk
- 2 Tablespoons Potato Starch Arrowroot starch will work as well
- 2-3 Tablespoon Nutritional yeast Add 2 or 3 tablespoons as per your taste
- 1/2 Teaspoon Onion powder
- 1/2 Teaspoon Garlic Powder
- 1/2 Teaspoon Ground Cumin
- 1/4 Teaspoon Smoked Paprika
- Himalayan salt (or pink salt) to taste

Instructions
- Mix all the ingredients in a heavy pan until all combined. This works better with a whisk.
- Place the pan on medium-low heat and cook until it simmers - stirring constantly. Let it cook to your preferred thickness and then remove from heat.
- Use this simple roux in your favourite dish as substitute for cheese sauce.
