I always love cherry season, heading out to the orchards and picking ripe, juicy cherries for Cherry Salsa. I use them in a variety of ways. One of them is to make a sweet and savoury cherry salsa. I combine the sweet cherries with lemon juice, chopped onion and fresh herbs to get an incredible blend of tastes and flavours.
I took this to a picnic the other day and it was a hit! It’s delicious as a side salad, dip and even over grilled veggies and meats.


Very easy to put together using fresh ingredients. The hardest part – was pitting the cherries. All I did after was was chop the herbs, the small shallot and mix in the vinaigrette. Hope you will enjoy this as much as we did!

Ingredients
- 2 Cups Sweet cherries, pitted and cut in half
- 1 Shallot chopped
- 1/2 Cup Fresh Cilantro chopped
- 3 Tablespoon Fresh Basil chopped I used purple Basil but any will work
- 1/8 Cup Lemon Juice freshly squeezed
- 1 Teaspoon Olive oil extra virgin
- 1 Teaspoon Maple Syrup
- 1 Clove Garlic minced
- 1 Chilli finely chopped Optional
- Pinch Himalayan salt (or pink salt)

Instructions
- Combine all the ingredients in a medium size bowl and mix until all infused.
- Taste and adjust flavours to your liking and enjoy!
