Ingredients
- 1 Block firm tofu with the water squeezed out and mashed
- 1 Small onion thinly sliced
- 1 Inch Fresh Ginger cut into long thin strips
- 1 Red sweet pepper chopped
- 1 cup Mushrooms sliced
- 2 Tablespoon Oil
- 3-4 Curry leaves (optional)
- 1/2 Teaspoon Salt (or to taste)
- 1/4 Teaspoon Turmeric powder
- 1/4 Teaspoon Chilli Flakes
- 1/4 Teaspoon Cumin powder

Instructions
- Place a medium size pan and medium heat.
- Add the oil and heat until hot but not smoking.
- Add the the onions, ginger and curry leaves (if using). Cook until the onions start to caramelize. Stirring constantly.
- Add the salt, turmeric powder, chilli flakes and stir until combined and fragrant.
- Add the sweet pepper and mushrooms and cook 5-7 minutes or until the vegetables begin to soften.
- Add the mashed tofu and cook 5-7 minutes longer, stirring constantly.
- Serve hot with rice, toast, flatbread or eat it on it's own.
