Tofu Scramble with Vegetables
The easiest and most delicious Tofu Scramble! If you are looking for a nutritious, quick dish, this one’s for you. Just few ingredients, 20 minutes and 1 pan required. Super easy and high in protein! It’s hearty, satisfying and can be eaten for any meal. Substitute any of your favourite vegetables to make this quick powerhouse dish!
Instructions
  1. Place a medium size pan and medium heat.
  2. Add the oil and heat until hot but not smoking.
  3. Add the the onions, ginger and curry leaves (if using). Cook until the onions start to caramelize. Stirring constantly.
  4. Add the salt, turmeric powder, chilli flakes and stir until combined and fragrant.
  5. Add the sweet pepper and mushrooms and cook 5-7 minutes or until the vegetables begin to soften.
  6. Add the mashed tofu and cook 5-7 minutes longer, stirring constantly.
  7. Serve hot with rice, toast, flatbread or eat it on it’s own.
