Lotus Root are loaded with vitamins, minerals, protein and dietary fiber. Lotus root has a delicate, sweet taste and a crunchy texture. It is usually added to stir-fries, soups, curries, and stews. In soups, it has a softer texture but stays firm. Stir fired it is tender crispy and infused with the detoxifying properties of the turmeric, this is a super nutritious power food. Naturally gluten and dairy free and of course completely vegan.
Lotus Root is real superfood. It has a crunchy texture with a mildly sweet, water chestnut like flavor. This vegetable is so versatile it virtually absorbs any flavour. You can add any spice to make this dish your own and it will shine. My version infuses it with turmeric for the addition benefit of detoxification.

Ingredients
- 340 Grams (12 ounces) Lotus Root (thinly sliced in rounds) I used frozen because they are partially cooked.
- 1/2 Cup Edamame or Peas
- 2 Tablespoon Oil
- 1 onion chopped
- 1 Inch Piece of fresh Turmeric finely diced or you can use 1/2 Teaspoon Turmeric Powder
- 1 Teaspoon Ginger Paste or finely diced
- 1 Large Clove garlic minced
- 1 Teaspoon Himalayan salt (or pink salt)
- 1 Red chilli finely chopped Optional depending on your heat preference
- 1/2 Teaspoon Cumin powder
- 1/2 Teaspoon Coriander powder
- Juice of half a lemon

Instructions
- Place a medium pan on medium heat and add the oil.
- Add the chopped onions, ginger, garlic and diced turmeric (if using fresh - if however, you are using the powder then add when you add the salt and chilli).
- Cook until the onions are translucent and soft.
- Add in the salt and chilli (and turmeric powder if you are using the powder). Cook until fragrant (2-3 minutes).
- Mix in the lotus root slices and stir until all combined. Thaw and rise the lotus root before adding it.
- Turn heat to medium-low and cook covered for 15 minutes. Stirring frequently.
- One the lotus root is cooked, stir in edamame, add in the ground cumin and coriander and mix.
- Turn the heat to medium-high and sear the mixture - stirring constantly (2-3 minutes). if it sticks to the pan, sprinkle in some water.
- Remove from heat. Squeeze on the lemon juice, mix and serve hot with rice, quinoa or any flatbread.
